What exactly are microgreens? 

Microgreens are vegetable greens that are harvested at an earlier stage of growth, when they start developing their leaves. They are harvested about two to three weeks after germination, depending on the variety.

What is all the fuss about? 

Studies have shown microgreens are up to 40 times more nutrient-dense than its mature counterpart, which makes it a sought after superfood.  

In years past, microgreens have not been widely available and only came in a few varieties; like wheatgrass sold in health food stores. 

Now microgreens growers are tapping into more flavorful profiles and varieties like leeks, beets and did we say sunflowers already?
